  • RINSE GRREN ONION AND CUT INTO THIN DIAGONAL RINGS.
  • SLIT OPEN THE CHILI PEPPER, REMOVE THE SEEDS, TRIM AND CUT INTO THIN STRIPS.
  • PEEL AND CHOP GARLIC.
  • HEAT OIL AND SAUTE GREEN ONION, CHILI PEPPER,AND GARLIC UNTIL TRANSLUCENT.ADD COCONUT MILK
  • REMOVE PEEL AND CORE FROM PINEAPPLE, DICE VERY FINELY, AND STIR INTO SAUCE.
  • SEASON TO TASTE WITH SALT AND PEPPER,TRANSFER TO A SMALL BOWL AND CHILL UNTIL SERVED.

    Your timing was perfect with this recipe! A friend at work just asked me today what she should serve for a luau party. I came up with a favorite dip to serve in a pineapple shell, and what thinking about something coconutty to serve in a coconut shell. Voila! Here it is! Tinkerbell just granted my wish. Now, about that winning lottery ticket....
