How to make it

  • Boil salted water and cook rice for 10 minutes
  • Over medium high heat, coat the bottom of a large heavy skillet with olive oil
  • Break sausage into skillet and brown
  • While sausage is cooking, chop the onion and add to skillet and stir
  • Then chop the carrots and add
  • Then chop all the peppers and add
  • Then chop the cabbage, slice the wedge on an angle
  • Stir all together and add the chicken broth and salt
  • Cover and simmer for 10 minutes. When rice is done, add it to the skillet and stir.
  • Cover and simmer for another 15 minutes
  • Save the rice water in case you need to add a spoonful or two while the dish is simmering

    Well, I substituted chicken chorizo because I don't eat pig and didn't have cabbage or jalapeno, however I added an egg and cut the broth in half..sooo good. My boyfriend was very pleased :)
