One Skillet Chorizo and Rice

- 1 lb. fresh chorizo sausage shopping list
- olive oil shopping list
- 1 large sweet onion shopping list
- 20 baby carrots shopping list
- 1 whole roasted red pepper shopping list
- 1 ancient sweets pepper, seeds removed ( or another whole roasted red pepper) shopping list
- 1 jalapeno pepper, seeds and ribs removed shopping list
- 1/2 head cabbage shopping list
- 1 tsp. salt shopping list
- 1 cup chicken broth shopping list
- 2 bags success style rice shopping list
How to make it
- Boil salted water and cook rice for 10 minutes
- Over medium high heat, coat the bottom of a large heavy skillet with olive oil
- Break sausage into skillet and brown
- While sausage is cooking, chop the onion and add to skillet and stir
- Then chop the carrots and add
- Then chop all the peppers and add
- Then chop the cabbage, slice the wedge on an angle
- Stir all together and add the chicken broth and salt
- Cover and simmer for 10 minutes. When rice is done, add it to the skillet and stir.
- Cover and simmer for another 15 minutes
- Save the rice water in case you need to add a spoonful or two while the dish is simmering

Well, I substituted chicken chorizo because I don't eat pig and didn't have cabbage or jalapeno, however I added an egg and cut the broth in half..sooo good. My boyfriend was very pleased :)
