Ingredients

1/2 CUP HOT CHILI POWDER

2 TABLESPOONS SALT

2 POUNDS MINI -POTATOES THEY ARE LIKE BITE SIZE UNPEELED (APPROX ,SIZE IS - 1 -1/2 TO 2 INCHES LONG)

PEANUT OIL FOR DEEP FRYING

Directions

MIX THE CHILI POWDER AND SALT AND PUT IT ON A PLATE, SET ASIDE.............

BOIL THE POTATOES WHOLE -IN SALTED WATER UNTIL TENDER BUT NOT FALLING APART, ............DRAIN

HOLD EACH POTATO IN A DRY CLOTH AND PULL OFF SKIN GENTLY USING THE BACK OF A KNIFE.

AS EACH ONE IS PEELED ,ROLL IT IN THE SPICY SALT MIXTURE, PRESSING IT INTO THE SURFACE UNTIL COATED WELL, ( YOU MUST DO THIS WHILE POTATOES ARE STILL DAMP) SET ASIDE

FILL A WOK - ONE -THIRD FULL OF THE OIL AND HEAT TO 375 DEGREES F. OR FILL A DEEP FRYER THE RECOMMENDED LEVEL.

ADD THE POTATOES IN SMALL BATCHES, AND FRY FOR 2 - 3 MINUTES OR UNTIL GOLDEN BROWN.

REMOVE POTATOES AND DRAIN, AND SERVE

MAKES ABOUT 12 ( CAN DOUBLE OR TRIPE THE RECIPE)
