- 1/2 CUP hot chili powder shopping list
- 2 TABLESPOONS salt shopping list
- 2 POUNDS MINI -potatoes THEY ARE LIKE BITE SIZE UNPEELED (APPROX ,SIZE IS - 1 -1/2 TO 2 INCHES LONG) shopping list
- peanut oil FOR DEEP FRYING shopping list
How to make it
- MIX THE CHILI POWDER AND SALT AND PUT IT ON A PLATE, SET ASIDE.............
- BOIL THE POTATOES WHOLE -IN SALTED WATER UNTIL TENDER BUT NOT FALLING APART, ............DRAIN
- HOLD EACH POTATO IN A DRY CLOTH AND PULL OFF SKIN GENTLY USING THE BACK OF A KNIFE.
- AS EACH ONE IS PEELED ,ROLL IT IN THE SPICY SALT MIXTURE, PRESSING IT INTO THE SURFACE UNTIL COATED WELL, ( YOU MUST DO THIS WHILE POTATOES ARE STILL DAMP) SET ASIDE
- FILL A WOK - ONE -THIRD FULL OF THE OIL AND HEAT TO 375 DEGREES F. OR FILL A DEEP FRYER THE RECOMMENDED LEVEL.
- ADD THE POTATOES IN SMALL BATCHES, AND FRY FOR 2 - 3 MINUTES OR UNTIL GOLDEN BROWN.
- REMOVE POTATOES AND DRAIN, AND SERVE
- MAKES ABOUT 12 ( CAN DOUBLE OR TRIPE THE RECIPE)

These sound SO good! Simple and just plain yummy. Have you ever tried Red Robin's seasoned salt? Might be good rolled in that, too. I'll try it the "right" way first...thanks!
