Cheeseburger soup

- 1/2 cup diced onion shopping list
- 2 oz. butter shopping list
- 4 oz flour shopping list
- 1/2 cup dill pickle juice shopping list
- 3 cups chicken stock shopping list
- 1/2 lb cooked ground beef, drained shopping list
- diced pickle spears....to desired taste, I use about 1/4 cup shopping list
- 3 oz. havarti cheese w/ dill (Laughing cow works also, if you are looking for a lighter cheese, Just add a 1/2 teas. dill) shopping list
- 1/2 cup whipping cream shopping list
- salt shopping list
- pepper shopping list
How to make it
- Saute onion in butter until translucent. Add flour and cook to make a roux. Add pickle juice and then the chicken stock. Cook until smooth and velvety. Add drained beef and continue to cook over low heat. Add chopped pickles. Then add cheese and stir until melted. Finish with cream and cook a few minutes more. Add salt and pepper to taste.
