White Chocolate Raspberry Mousse

- 12 oz white chocolate, chopped shopping list
- 1/2 tsp gelatin powder shopping list
- 1/2 cup milk shopping list
- 1 cup whipping cream shopping list
- 3 tbsp. Chambord (raspberry liqueur) shopping list
- 1 cup raspberries shopping list
How to make it
- Melt chocolate in a bowl resting over a pot of gently simmering water, stirring constantly.
- Heat milk (microwave is easiest) to just below a simmer and sprinkle with gelatin, allow to sit for 1 minute.
- Then, whisk milk and gelatin mixture into chocolate. Let cool to room temperature.
- Whip cream to soft peaks and fold in Chambord. Fold whipped cream into chocolate.
- Sprinkle the raspberries into the mousse mixture and gently fold.
- Pour in to glasses and chill for at least 4 hours before serving.
- SERVING: I like to serve it in a martini glass with a raspberry and chocolate shaving for garnish

NOt a whole lot of things in this world better than raspberry/chocolate combination. Yumola. This one gets a 5, sounds decadent.
