White Chocolate Raspberry Mousse Recipe

Ingredients

12 oz white chocolate, chopped

1/2 tsp gelatin powder

1/2 cup milk

1 cup whipping cream

3 tbsp. Chambord (raspberry liqueur)

1 cup raspberries

Directions

Melt chocolate in a bowl resting over a pot of gently simmering water, stirring constantly.

Heat milk (microwave is easiest) to just below a simmer and sprinkle with gelatin, allow to sit for 1 minute.

Then, whisk milk and gelatin mixture into chocolate. Let cool to room temperature.

Whip cream to soft peaks and fold in Chambord. Fold whipped cream into chocolate.

Sprinkle the raspberries into the mousse mixture and gently fold.

Pour in to glasses and chill for at least 4 hours before serving.

SERVING: I like to serve it in a martini glass with a raspberry and chocolate shaving for garnish
