How to make it

  • Preheat oven to 400 degrees.
  • Melt butter in bottom of casserole dish.
  • Mix cheese, flour, cornmeal and spices.
  • Beat egg with milk.
  • Dip catfish in egg mixture then dredge in the mixture.
  • Place filets in casserole dish turning once to coat with butter.
  • Put remaining cheese mixture on top and pour more butter on top.
  • Bake for 15 minutes or until fish flakes.
  • For spicier flavor, add granulated garlic, cayenne pepper or hot sauce.

    Lookin good. Can't get catfish out here but I think tilapia would work. I reckon this would go great with some grits and a couple fried eggs for breakfast. Thanks.
