How to make it

  • Place egg yolks into the bowl of an electric mixer attached with a whip
  • In a SMALL saucepan combine sugar and water and bring to a boil, stirring with a heat proof spatula to get any sugar crystals from the sides
  • Boil for 3 minutes
  • With the motor running quickly pour the sugar syrup into the yolks
  • Beat until the yolks have cooled to touch
  • With the motor still running start adding bits of butter until all is Incorporated
  • Add flavoring of your choice, raspberry, coffee, halenut liquer etc, or some extract. I add 1/4 cup unsweetened cocoa powder to make a delicate chocolate.
  • I have made this substituting Splenda for sugar for a diabetic friend and it worked great!
