Ingredients
  • 1/4 cup chopped red onion
  • 1/4 cup lime juice
  • 1/4 cup tarragon vinegar or herb vinegar
  • 1 large (1 1/2 cups) ripe mango, peeled, chopped
  • 1 tablespoon honey
  • 2 teaspoons finely chopped fresh gingerroot
  • 2 teaspoons chopped fresh mint leaves

Directions
  1. Combine all ingredients in medium bowl. Cover; refrigerate at least 4 hours or overnight. Serve with chicken, turkey or pork.
