Ingredients
  • 1 c millet
  • 2 c buttermilk
  • ½ c water
  • 1 tsp salt
  • 1 T sugar
  • 1/3 c plain nonfat yogurt
  • 1 egg, lightly beaten
  • 2 T flour (any kind)
  • 2 T oil

Directions
  1. In a medium saucepan, bring the millet, milk, water, and salt to a boil. Simmer, covered for 20 minutes or until the liquid has been absorbed.
  2. Stir in sugar, yogurt, egg, and flour.
  3. In a large skillet, heat the oil. Drop the millet mixture into lumps about 3" diameter and press with the back of the spoon to spread the batter more evenly.
  4. Fry until golden brown, turning once, about 8 to 10 minutes in all.
