Light and quick.Can be double for a large family.I Love it with instant couscous (use chicken stock instead of water when making it).

I used 1/2 of a chicken and cut it up since I'm not a HUGE meat eater and because the cut pieces are easier to mix with everything else. I also used more sundried tomatoes and an extra clove of garlic, as well as cut the artichokes in thirds instead of halves so my mixed mouthful wasn't so bulky. Also, instead of using regular salt to season, I used garlic salt! I put this recipe over angel hair, and it was divine!
