Ingredients
  • 2 Boneless, skinless chicken breast half (6-8 ounces each)
  • salt and ground pepper
  • 2 tablespoon all-purpose flour
  • 6 sun-dried tomatoes packed in oil, drained, and slivered
  • 5 teaspoons olive oil
  • 1 can artichoke hearts packed in water, drained, rinsed, and halved
  • 4 scallions, green and white parts separated, thinly sliced
  • 2 garlic cloves, thinly sliced
  • Add a few red pepper flakes if you like zesty.

Directions
  1. Place chicken between 2 sheets of plastic wrap or waxed paper.
  2. With the flat side of a meat mallet or a small skillet, pound to a 1/2-inch thickness.
  3. In a medium skillet, heat 4 teaspoons of the oil over medium-high heat.
  4. Season chicken with salt and pepper. Coat chicken in flour, shaking off excess.
  5. Sauté until golden brown and cooked through, 1 1/2 to 2 minutes per side. Remove.
  6. To pan, add garlic, white part of the scallions, and 1/2 cup water; bring to a boil, scraping up browned bits.
  7. Add artichokes, sun-dried tomatoes, and remaining teaspoon oil; season with salt and pepper. (Add a few red pepper flakes if you like zesty).
  8. Cook until artichokes are heated through and sauce has reduced slightly, about 1 minute.
  9. Spoon mixture over chicken.
  10. Sprinkle green parts of scallions over mixture(if you like).
  11. Good served with couscous or rice or pasta.

Alterations


I used 1/2 of a chicken and cut it up since I'm not a HUGE meat eater and because the cut pieces are easier to mix with everything else. I also used more sundried tomatoes and an extra clove of garlic, as well as cut the artichokes in thirds instead of halves so my mixed mouthful wasn't so bulky. Also, instead of using regular salt to season, I used garlic salt! I put this recipe over angel hair, and it was divine!
