Low Carb Egg Muffins Recipe
My Daughter gave me this one. I don't know where she got it but it is a good breakfast. I have lost 60 lbs. by eating this way.

Ingredients
  • 6 eggs
  • 1 lb sausage, can us more if you want
  • 1 smalll bell pepper,chopped
  • 1 small onion,chopped
  • 1 cup cheddar cheese, shredded

Directions
  1. Preheat oven at 350.
  2. Brown sausage and crumble.
  3. Saute pepper and onions in olive oil.
  4. Whisk the 6 eggs.
  5. Mix sausage, peppers onions and eggs.
  6. Add 1/2 cup cheese to the mixture.
  7. Grease muffin pan.
  8. Fill each muffin cup 3/4 full.
  9. Sprinkle remaining chese on top.
  10. Bake for 15 to 2o minutes, until the muffins brown.
