Ingredients

How to make it

  • Cut cake into 2 layers
  • Whip the cream
  • To whipped cream add sugar, vanilla, strawberries, pineapple, and marshmallows
  • Mix well
  • Then cover bottom and top layers of cake with this mixture
  • Sprinkle top and sides generously with toasted coconut OR
  • when ready to serve, place whole or sliced strawberries on each piece
  • Keep in refrigerator

    Rosemary...thanks for iviting me to your corner.

    I've made your Lemon Pecan Raisin Cake 2 times in the past 4 days. It's great... I take it to the job and we have it with morning coffee.

    I baked the cake in a loaf pan. Cooled it for about 15 minutes out of the oven...removed it from pan..cooled another 5 minutes then wrapped it in heavy foil and put it in the freezer.

    Next morning it's slices beautifully while still frozen. Great recipe !!!! Thanks again
