Cowslaw Jacket Potatoes Recipe

Ingredients

4 Large Baking Potatoes - 1 per person

1 Large Tub of Cowslaw

Butter to taste

Directions

Wash, scrub each Potato, leaving the skin on

Prick each Potato all over with a Fork

Place in the Microwave Oven and cook on high heat for 9 minutes. You may find they cook better if only 2 potatoes are in for cooking at a time

When cooked, cut each potato in half and dot with a knob of Butter

Smother each with a large amount of Cowslaw.

This makes a very nourishing and easy snack lunch.

If desired, slice up some tomato and/or cucumber to have along with this dish.

I love this stuff!! Coleslaw has green and purple cabbage and carrots and an onion all grated, and I include cauliflower. Don't add dressing until the meal at hand. (I keep all the veggies in a tupperware container thru-out the wk. and stays fresh.) 55555 thank you magpieno
