Tropical Ice Pops Recipe
These are fun, refreshing and tasty. Great if you can't have dairy, but hanker for something ice-creamy

Ingredients
  • 1/4 fresh organic pineapple (or 4 rings organic canned pineapple)
  • 1 peach (fresh is best or two halves of canned)
  • 1 can coconut milk (Thai Kitchen brand is great)
  • 3 T agave syrup (I suppose you could use a pinch of Stevia for this too instead of agave, although I have not tried that)
  • Norpro Ice Pop Maker (the best ice pop mold I've ever come across)

Directions
  1. Blend the first 4 ingredients till pineapple and peaches are in very very small chunks.
  2. Pour into the mold, add popsicle sticks.
  3. Freeze till solid.
  4. Run mold under hot water for 15 to 30 seconds, remove ice pop and fall in love with the creamy coconutty goodness.
