Ingredients
  • 4 strips bacon
  • 1 cup chopped onion
  • 1 teaspoon, chopped thyme
  • 5 cups water
  • 3 cups diced peeled potatoes
  • 1 1/2 cups coarsely chopped carrots
  • 1/2 cup chopped celery
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 can ( 28 ounces) diced tomatoes, drainned
  • 1 tablespoon dried parsley flakes
  • 1 1/2 cups cubed cooked fish

Directions
  1. IN a Dutch oven over medium heat, cook bacon until crisp. Drain and reserve 1 tespoon of drippings. Crumble bacon and set aside. Saute onion and thyme in drippings. Add the water, potatoes, carrots and celery, salt and pepper. Cover and simmer for 20-25 mins. or until vegetable are tender. Add tomatoes, parsley and bacon; cook for 10 minutes. Add fish; heat througly. Yields 12 servings

I am always trying chowder recipes and I don't ever recall making a fish chowder Now I am going to have to try yours so that I can say that I have. . .and because this one sounds delicious =D
