Baked Chicken Salad Recipe
This is my favorite chicken salad recipe. The flavors come together great when it's baked and you can bake it in a fluted bundt pan, or any other shape you like, for a nice presentation.

Ingredients
  • 2 cups chicken, cooked and diced
  • 22 crackers (ritz or waverly)
  • 1 8 oz can crushed pineapple with juice
  • 1 cup mayonnaise
  • 1/3 cup pecans, chopped
  • ¼ cup celery, chopped
  • ¼ cup onion, chopped
  • 2 eggs, room temperature, seperated
  • 1 T parsley flakes
  • 1 T lemon juice

Directions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients except egg whites.
  3. Beat egg whites and fold into mixture.
  4. Pour in prepared baking dish.
  5. Place in large shallow pan with 1 ¼ inches of hot water.
  6. Cook 35-40 minutes until toothpick comes out clean.
  7. Cool on wire rack.
