Chicken Bean Tostados Recipe

Ingredients

1 lb ground turkey or chicken or beef

8 corn tortillas

1 can refried beans

1 tsp cumin

1 tsp chili powder

2 cloves garlic chopped

1 sm onion or 2 shallots chopped fine

8 oz cheddar cheese shredded

1/4 cup cold coffee

salt to taste...not too much though...not good for you!! 1/2tsp maybe

1 tbs extra virgin olive oil

1/4 cup chopped fresh cilantro

1 chopped tomato

2 cups shredded lettuce

sliced black olives

sour cream

avocado

Directions

Fry tortillas on both sides in EVOO in frypan until crisp. keep them flat

move tortillas to paper towel to drain

in frypan, brown ground turkey ....drain fat if any.

add onion or shallot and fry until softened

add cumin, chili powder, and garlic.

mix well add cold coffee and simmer for 5 minutes

put refried beans in sm bowl and heat up in microwave

spread warmed refried beans on 8 fried tostados

sprinkle cooked turkey on top of beans

sprinkle cheese on top of meat

sprinkle on cilantro, tomatoes, lettuce, avocado slices, black olives, sour cream and enjoy
