How to make it

  • Fry tortillas on both sides in EVOO in frypan until crisp. keep them flat
  • move tortillas to paper towel to drain
  • in frypan, brown ground turkey ....drain fat if any.
  • add onion or shallot and fry until softened
  • add cumin, chili powder, and garlic.
  • mix well add cold coffee and simmer for 5 minutes
  • put refried beans in sm bowl and heat up in microwave
  • spread warmed refried beans on 8 fried tostados
  • sprinkle cooked turkey on top of beans
  • sprinkle cheese on top of meat
  • sprinkle on cilantro, tomatoes, lettuce, avocado slices, black olives, sour cream and enjoy
