How to make it

  • In a sauce pan, saute rice, mushrooms, almonds in butter for 5 minutes or until rice is lightly browned. Stir in water; buuilon, parsley, lemon juice, salt and bay leaf; bringing to a boil. Reduce heat; cover and simmer for 25 minutes or until liquid is absorbed. Discard bay leaf. Spoon about 3/4 cup rice mixture into each hen. Place breast side up in a large roasting pan; tie drumsticks together. Place two bacon pieces over each hen. Cover and bake at 400 degrees for 45 minutes, until meat thermother reads 180 degrees for hens or 165 degrees for stuffing.

    Super! Guess what's in my fridge? Two gorgeous cornish hens. I was going to use them for my recipe "Chicken Tabaka", but now I am not so sure anymore... :) Thanks for a great post!

    I do like cornish hens and it has been awhile since I cooked them. This recipe sounds very good so I will try it the next time I do the hens which may be this week since I saw this, lol.
