Stuffed Cornish Hen

- 1 cup uncooked long grain rice shopping list
- 1 can ( 4 ounces) mushrooms stems and pieces, drainned shopping list
- 1/2 cup slivered almonds shopping list
- 3 tablespoons chopped onions shopping list
- 3 tablespoons butter or margarine shopping list
- 2 cups water shopping list
- 2 chicken bouilion cubes shopping list
- 2 tablespoons minced fresh parsley shopping list
- 1 tablespoon fresh lemon juice shopping list
- 1 teaspoon salt shopping list
- 1 bay leaf shopping list
- 6 cornish game hens ( 22-25 ounces each) shopping list
- 6 bacon strips, halved shopping list
How to make it
- In a sauce pan, saute rice, mushrooms, almonds in butter for 5 minutes or until rice is lightly browned. Stir in water; buuilon, parsley, lemon juice, salt and bay leaf; bringing to a boil. Reduce heat; cover and simmer for 25 minutes or until liquid is absorbed. Discard bay leaf. Spoon about 3/4 cup rice mixture into each hen. Place breast side up in a large roasting pan; tie drumsticks together. Place two bacon pieces over each hen. Cover and bake at 400 degrees for 45 minutes, until meat thermother reads 180 degrees for hens or 165 degrees for stuffing.

I do like cornish hens and it has been awhile since I cooked them. This recipe sounds very good so I will try it the next time I do the hens which may be this week since I saw this, lol.
