How to make it

  • Mix, water and pumpkin in medium bowl. Stir just until moistened. Batter may be lumpy.
  • In large skillet over medium heat; spray with nonstick spray. Pour 1/4 cup batter onto hot pan; cook until batter bubbles begin to burst.
  • Turn and continue cooking for 1 to 2 minutes or until golden. Repeat with remaining batter.
  • Place on serving plate, top with butter and sprikle with sugar powder.
  • Serve with syrup.

    Try these with chopped pecans and add chopped pecans to your heated syrup!

    Great! Another use for my griddle! I rarely ever use it, but love pumpkin and never buy it. This sounds excellent. I've seen these advertised at our iHop Pancake House during Thanksgiving, but never did get a chance to try them. Now I can make my own! Thanks!
