Ingredients
  • 1 lb Rigatoni or other medium pasta shape
  • 1 lb fresh bratwurst
  • 1/2 cup beer
  • 1 1/2 cups low-fat cheddar cheese
  • 2 sweet red bell peppers, seeded and coarsley chopped
  • 4 garlic cloves, peeled and chopped
  • 1/2 cup fresh basil, julienned (do this right before tossing at the end)
  • 1 T olive oil

Directions
  1. Preheat oven to 425 degrees
  2. Mix red pepper, onions, and garlic with 1 T olive oil in a 9x13 inch baking dish and roast in oven for 25 minutes, stirring occasionally
  3. While vegetables roast, remove casing from bratwurst, crumble meat and brown in a skillet over medium heat until they are no longer pink and well browned.
  4. Remove bratwurst from pan and drain on paper towels.
  5. Pour fat from skillet
  6. Add bratwurst back to skillet and pour in the beer and simmer
  7. Cook pasta according to package directions and drain, reserving 1/2 cup of pasta water
  8. Remove roasted vegetables from oven
  9. Immediately add bratwurst from skillet, add basil, pasta and 1 cup of the cheese and toss to mix thoroughly
  10. If mixture seems a little dry add some of the pasta water to loosen it up
  11. Spoon pasta on to serving plates, sprinkle remaining cheese over top and serve.
