How to make it

  • In a very large heavy duty skillet sauté all vegetables with the butter or margarine over medium high heat, stirring occasionally until vegetables become tender.
  • Fold in beaten eggs, salt, pepper and breadcrumbs or matzoh meal.
  • Spoon into a well greased 9 x 13 baking pan and bake 350F about 45 minutes or until firm.
  • Cool 10 minutes in pan and cut into squares to serve.
  • Note: I like garlic so I add some to the recipe.
  • Recipe may also be baked in individual muffin tins if desired.
  • Serve with a dollop of sour cream atop the pieces and a sprinkle of fresh cut chives .
  • Freezes well

    Sounds like another good recipe! I've never made a veggie kugel before. I love the sweet kugels! I'll be trying this recipe too for Passover! Thank you for sharing!

    Yes, its actually 1 1/2 sticks of butter. You need that much for all the veges but can certainly cut down if you wish or use a heart healthy margarine instead.!

    Actually, this sounds marvelous. I like the idea of baking them as little muffins. Great idea!
