pizza with sage peccorino apples and honey

- for the dough: shopping list
- 250g flour shopping list
- 12g fresh yeast shopping list
- 1/2 tablespoon sugar shopping list
- 1/2 teaspoon salt shopping list
- 125ml lukewarm water shopping list
- about 1/2 tablespoon olive oil shopping list
How to make it
- in a glass cream yeast with water and add olive oil. mix flour, sugar and salt in the bowl of a standmixer and make a well in the centre. pour in yeast-mixture and mix together until very smooth and elastic. put in clean bowl, cover and let rise for about 1,5 hours.
- heat oven to 220c°
- uncover dough, punch out air, then tip out onto a lightly floured surface. roll into a 25cm circle (do this directly onto a nonstick parchment paper). rub pizza base with a little olive oil scatter over the taleggio cheese, then the apples, then sage and pecorino. drizzle honey and a little more olive oil.
- slide pizza (on paper) onto the hot baking sheet. do this quick, quick & bake for 5 minutes. then carefully slide the baking parchment away from the pizza and bake for another 15 minutes, until crust is golden and cheese has melted and is bubbling. sprinkle with freshly ground pepper, drizzle some more honey on top and eat immediately.
