Crispy Chewy Oatmeal Cookies Recipe
My family's favorite cookies. They are crisp on the outside and chewy on the inside.

Ingredients
  • 3 eggs, well beaten
  • 1 c. raisins
  • 1 tsp. vanilla extract
  • 1 c. butter softened
  • 1 c. brown sugar
  • 1 c. white sugar
  • 2 1/2 c. flour
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 2 tsp. baking soda
  • 2 c. oatmeal (substitute 1/2 c. wheat germ for more healthful cookies)
  • 3/4 c. shredded coconut

Directions
  1. Preheat oven to 350 degrees
  2. Combine eggs, raisins and vanilla and let stand for one hour, covered with plastic wrap. This is the secret to these cookies so don't omit this step.
  3. Cream together butter and sugars.
  4. Add flour, salt, cinnamon and soda to sugar mixture.
  5. Mix well.
  6. Blend in egg- raisin mixture, oatmeal, wheat germ and shredded coconut. Dough will be stiff.
  7. Drop by heaping teaspoons onto ungreased cookie sheet or roll into small balls and flatten slightly on cookie sheet.
  8. Bake for 10-12 minutes or until lightly browned.

Sounds yummy, gonna have to make me a batch soon. I think that is the key to a good oatmeal cookie, gotta be crispy and crunchy. Hugs


Made these with my little girl and we had some fun and the cookies tasted fab! A bit hit with everyone. Got my 5.


I just made a batch of these cookies and they're absolutely wonderful. I'm sure I could have baked them a little longer to get them crispier, but they're just a little crispy, but VERY chewy! This will be the only oatmeal cookie recipe I use from now on!

Alterations


#6 in the directions calls for wheat germ. I'm not seeing wheat germ in the list of ingredients. I omitted the coconut because we don't particularily care for coconut. These cookies don't need it. I used craisins instead of raisins. I also added about 1/4 tsp. fresh ground nutmeg.
