Soft Pumpkin Drops

- 1 cup sugar shopping list
- 1 cup canned pumpkin shopping list
- 1/2 cup shortening shopping list
- 1 Tbs. grated orange peel shopping list
- 2 cups all-purpose flour or whole wheat flour shopping list
- 1 tsp. baking powder shopping list
- 1 tsp. baking soda shopping list
- 1 tsp. ground cinnamon shopping list
- 1/4 tsp. salt shopping list
- 1/2 cup raisins shopping list
- 1/2 cup chopped nuts shopping list
- Creamy Vanilla Frosting: (recipe follows) shopping list
- 3 cups powdered sugar shopping list
- 1/3 cup margarine or butter, softened shopping list
- 1 1/2 tsp. vanilla shopping list
- About 2 Tbs. milk shopping list
How to make it
- Heat oven to 375 degrees.
- Mix sugar, pumpkin, shortening and orange peel.
- Stir in flour, baking powder, baking soda, cinnamon and salt.
- Mix in raisins and nuts.
- Drop by rounded teaspoonfuls about 2-inches apart onto ungreased cookie sheet (or parchment paper).
- Bake until light brown, 8 to 10 minutes; cool.
- Frost with Creamy Vanilla Frosting:
- Mix powdered sugar and margarine or butter.
- Stir in vanilla and milk; beat until smooth and of spreading consistency.
