A soft and delicious cookie. Very easy to make. Betty Crocker's Best Of Baking.

Ingredients
- 1 cup Sugar
- 1 cup canned Pumpkin
- 1/2 cup Shortening
- 1 Tbs. grated Orange Peel
- 2 cups all-purpose Flour or Whole Wheat Flour
- 1 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1 tsp. ground Cinnamon
- 1/4 tsp. Salt
- 1/2 cup raisins
- 1/2 cup chopped Nuts
- Creamy Vanilla Frosting: (recipe follows)
- 3 cups Powdered Sugar
- 1/3 cup Margarine or Butter, softened
- 1 1/2 tsp. Vanilla
- About 2 Tbs. Milk
Directions
- Heat oven to 375 degrees.
- Mix sugar, pumpkin, shortening and orange peel.
- Stir in flour, baking powder, baking soda, cinnamon and salt.
- Mix in raisins and nuts.
- Drop by rounded teaspoonfuls about 2-inches apart onto ungreased cookie sheet (or parchment paper).
- Bake until light brown, 8 to 10 minutes; cool.
- Frost with Creamy Vanilla Frosting:
- Mix powdered sugar and margarine or butter.
- Stir in vanilla and milk; beat until smooth and of spreading consistency.
