Edamame Fried Rice

- 1 Tbs. canola oil shopping list
- 2 carrots, shredded shopping list
- 1 yellow bell pepper, chopped shopping list
- 5 scallions, minced shopping list
- 3 to 4 Tbs. tamari or low-sodium soy sauce shopping list
- 3 cups cooked shelled edamame shopping list
- 4 cups cold cooked long-grain brown rice shopping list
How to make it
- Heat oil in large wok or skillet over medium-high heat. Add carrots, bell pepper and scallions, and stir-fry until just tender, about 2 minutes.
- Add tamari, edamame and rice, and stir-fry until combined and heated through, about 5 minutes. Serve.

I just recently tried edamames for the first time and LOVE them. I know they have to be gerat mixed with rice. Another great post, and a beautiful picture. Great post Mystic. You've got my 5.
