this is an irish peasant dish with a mixture of cabbage and potatoes

Ingredients
  • 6 med to large potatoes peeled and cubed
  • 1 onion finely chopped
  • 2 cloves of garlic minced
  • 2 cups of cabbage chopped
  • 2 tablespoons of butter
  • salt and pepper to taste

Directions
  1. cook and mash potatoes; set aside
  2. boil cabbage until soft and tender, drain and set aside.
  3. cook onion, garlic in butter until tender, but not brown.
  4. add cabbage to onions and stir together.
  5. mix together with mashed potatoes and salt and pepper to taste.
  6. bake in oven at 350 degrees F. for 30 minutes, uncovered..
