Moroccan Carrot Salad Recipe
A beautiful colorful salad adorned with fresh dill and parsley and sweetned with honey and a touch of lemon. Very refreshing

Ingredients
  • 1 pkg sweet carrots
  • 1 small bunch fresh dill chopped or about 1/2 cup
  • 1 small bunch of curley parsley chopped or about 1/2 cup
  • handful of golden raisins
  • 1 small lemon
  • honey to taste
  • pinch of salt and pepper
  • optional: dash of cinnamon to taste

Directions
  1. Finely grate carrots.
  2. Place carrots in bowl and add raisins, fresh chopped dill and parsley and fresh squeezed lemon juice.
  3. Lightly toss together.
  4. Add honey to taste for sweetness, a bit of salt and fresh grated pepper and cinnmon if desired.
  5. Lightly mix well.
  6. Best served when made fresh.
