Gourmet Mango Salsa

- 1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) shopping list
- 1/2 medium red onion, finely chopped or diced (your preferenece) shopping list
- 2 Jalapeño peppers, minced (include ribs and seeds for a hotter taste if desired) shopping list
- Jalepeno juice/chipotle pepper sauce/hot pepper sauce, to taste shopping list
- juice of 2 limes (about 2 tablespoons) shopping list
- 1/2 red bell pepper, diced shopping list
- 2 tablespoons olive oil shopping list
- 1 small cucumber, peeled and diced (about 1 cup) shopping list
- 3 Tbsp fresh cilantro leaves, chopped shopping list
- 3 Tbsp fresh lime juice shopping list
- salt to taste shopping list
- Freshly ground pepper, to taste shopping list
- Also good with jicama and/or coarsely diced tomato in small proportions. shopping list
- I even use white onions if I have no red onions shopping list
- Change these proportions depending on your taste. I overuse cilantro and underuse salt...just my preference. shopping list
How to make it
- Combine all ingredients except for hot pepper sauce (or whatever sauce you've chosen), salt and pepper.
- Blend thoroughly
- Add hot sauce of choice
- Season to taste with salt and pepper.
- NOTE: If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.
