How to make it

  • In a large pan cook spinach in water that clings to the leaves until it wilts.
  • Drain and rinse under cold water and gently squeeze out excess liquid.
  • Chop finely and reserve.
  • In medium pan cook onions in butter over medium heat until well caramelized.
  • Cool then mix with spinach, yogurt, salt and pepper.
  • Sprinkle with toasted walnuts and serve.
