How to make it

  • Preheat oven to 400F. Grease 12 muffin cups.
  • Combine dry ingredients in a large bowl.
  • In another bowl, beat together buttermilk, eggs and oil.
  • Gently blend into the flour mixture.
  • Fold in chocolate chips.
  • Bake 15 minutes, unmould immediately onto wire rack to cool completely.

    These sound delicious - thanks for sharing. I'll make these using organic butter or coconut oil instead of canola oil - I love my flavourful saturated fats :-)

    Stevia is a natural alternative sweetener, 0 cals 0 carbs but it comes from an herb (I actually grow some in my garden) and it is 300x sweeter than sugar. You can usually find it in health food stores.
