Ingredients
  • 1 cup cornmeal
  • 1 cup flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp stevia extract powder
  • 1 1/4 cups buttermilk
  • 2 eggs
  • 1/3 cup canola oil
  • 1/2 cup miniature chocolate chips

Directions
  1. Preheat oven to 400F. Grease 12 muffin cups.
  2. Combine dry ingredients in a large bowl.
  3. In another bowl, beat together buttermilk, eggs and oil.
  4. Gently blend into the flour mixture.
  5. Fold in chocolate chips.
  6. Bake 15 minutes, unmould immediately onto wire rack to cool completely.

Jo, may i ask, what is stevia extract powder?


These sound good.


Looks great and the carbs are low enough that I can have one.


Stevia is a natural alternative sweetener, 0 cals 0 carbs but it comes from an herb (I actually grow some in my garden) and it is 300x sweeter than sugar. You can usually find it in health food stores.

These sound delicious - thanks for sharing. I'll make these using organic butter or coconut oil instead of canola oil - I love my flavourful saturated fats :-)
