How to make it

  • Sift cocoa powder into bowl and whisk with caster sugar.
  • Add water and mix until smooth.
  • Pour into non-stick sauce pan and bring to a boil, stirring constantly.
  • Cook gently for 3 minutes., stirring frequently.
  • Remove from heat and add double cream, mixing until very smooth. You may seive the mixture for even further smoothness.
  • Cool completely and then chill for two hours before using.
