This is a mixture of spices used in some Middle Eastern dishes, particularly mansef, a Palestinian dish. Make ahead and keep it in your spice drawer.

Ingredients
  • 1/4 cuo black peppercorns
  • 1/8 cup coriander seeds
  • 1/8 cup cassia bark
  • 1/8 cup cloves
  • 1 tsp cardamomseeds
  • 1/8 cup ground nutmeg
  • 1/4 cup ground paprika

Directions
  1. Combine all the ingredients, except nutmeg and paprika.
  2. Grind in a blender or coffee mill until powdered.
  3. Pour into an airtight jar.
  4. Combine the nutmeg and paprika and add to the jar.
  5. Shake well until everything is mixed well.
  6. Cap and store.

I am sorry to question you, but we have friends that are from Syria, that use their spices every day and they use CUMIN, and at least three more that is not mentioned......could you please check to make sure that this is correct
