  • 2 1/2 lbs asparagus
  • 6 cups low-fat milk
  • 2 chicken stock cube
  • 2 tablespoons butter
  • 2 tablespoons flour
  • crouton (for garnish)

Directions

  2. 1Snap tough ends off asparagus and discard.
  3. 2Place cleaned asparagus in saucepan along with the milk.
  4. 3Crumble in the stock cubes and bring slowly to the boil.
  5. 4Simmer uncovered for 10-15 minutes until asparagus is just tender.
  6. 5Process in a food processor or blender until chunky.
  7. 6Melt butter in large saucepan.
  8. 7Add flour and cook until pale golden.
  9. 8Add soup and stir until it comes back to the boil.
  10. 9Serve garnished with the croutons.

Hi Twohot... I love Asparagus and I like this recipe for the method even more. So simple and you could do many veggie flavored soup bases this way.. Thanks for sharing......... jim


I just made this soup using leftover asparagus I roasted last night with olive oil and Goya vegetable seasoning and used Smart Balance spread instead of butter...The soup was so yummy even my 3 year old daughter had her own big bowl! And it fits in with my diet! THANKS!!!
