How to make it

  • Pastry:
  • In a medium bowl, mix together flour and salt. Using a pastry blender cut butter into flour mixture until coarse crumbs form. Add water, 1 T at a time until soft dough forms. Shape into disk, wrap in plastic wrap, and chill for 1 hour.
  • On floured surface, roll dough into 11" circle. Fit dough into a 9" quiche dish or pie pan. Trim edges. Chill for 30 minutes.
  • Prick dough with a fork , line with foil and fill with pie weights or dried beans. Bake 10 minutes. Remove foil and weights. Bake crust until firm, 10 minutes more. Cool.
  • Increase oven temp to 400 degrees.
  • Filling:
  • In a large skillet, melt butter over medium heat. Add leeks cook until softened, 10 minutes. Reserve 1 c leeks. Stir cream, nutmeg, salt, and pepper into skillet. Cook stirring occasionally, until thickened, about 2 minutes.
  • Spoon filling into prepared crust. Arrange potatoe slices and reserved leeks on top.
  • Bake tart until filling is heated through, 10 to 15 minutes. Cool slightly.
