  • Pastry:
  • 1 1/4 c flour
  • 1/2 t salt
  • 1/2 c butter, cut into small pieces
  • 2 - 3 T ice water
  • Filling:
  • 3 T butter
  • 3 large leeks, trimmed and thinly sliced
  • 3 T heavy cream
  • 1/4 t ground nutmeg
  • 1/4 t salt
  • 1/8 t pepper
  • 1 large cooked potato, peeled and thinly sliced

Directions
  1. Pastry:
  2. In a medium bowl, mix together flour and salt. Using a pastry blender cut butter into flour mixture until coarse crumbs form. Add water, 1 T at a time until soft dough forms. Shape into disk, wrap in plastic wrap, and chill for 1 hour.
  3. On floured surface, roll dough into 11" circle. Fit dough into a 9" quiche dish or pie pan. Trim edges. Chill for 30 minutes.
  4. Prick dough with a fork , line with foil and fill with pie weights or dried beans. Bake 10 minutes. Remove foil and weights. Bake crust until firm, 10 minutes more. Cool.
  5. Increase oven temp to 400 degrees.
  6. Filling:
  7. In a large skillet, melt butter over medium heat. Add leeks cook until softened, 10 minutes. Reserve 1 c leeks. Stir cream, nutmeg, salt, and pepper into skillet. Cook stirring occasionally, until thickened, about 2 minutes.
  8. Spoon filling into prepared crust. Arrange potatoe slices and reserved leeks on top.
  9. Bake tart until filling is heated through, 10 to 15 minutes. Cool slightly.
