Cowboy Beef Casserole

- 1 pound lean ground beef shopping list
- 1/4 cup chopped onion shopping list
- 1/4 cup chopped green pepper shopping list
- 1 can (16 oz) tomatoes, drained & diced shopping list
- 1 can (12 oz) whole kernel corn, drained shopping list
- 1 can (8 oz) tomato sauce shopping list
- 1/2 cup sliced stuffed olives shopping list
- 1-2 teaspoons chili powder shopping list
- 1 cup coarsely crushed corn chips shopping list
- 1/2 shredded cheddar cheese shopping list
How to make it
- Place beef in 2 quart microproof casserole; break up with fork. Add onion and green pepper. Cook on Hi (Max power) 9 minutes or until beef is no longer red, drain.
- Stir to break up beef. Add tomatoes to meat mixture. Stir in 14 cup reserved tomato liquid, corn, tomato sauce, olives, and chili powder. Cover. cook on Hi (Max) 6-8 minutes, or until heated through. STir, Sprinkle with corn chips and cheese. Cook on 50 (defrost) 2 minutes, or until cheese is melted. Let stand 3 minutes before serving.
