This is adapted from Jamie Oliver's dad's recipe from the Naked Chef Takes Off cookbook. Jamie wrote of how his father used to make these in the pub where Jamie grew up. I cut down on the size of these babies by half and was still quite stuffed.

Ingredients
  • 1 lb of good quality ground beef, preferably natural or organic
  • 1 medium red onion, diced
  • 1 large egg
  • 1 handful of fresh bread crumbs with crust removed(about on slice)
  • 1/2 tbsp coriander seeds, crushed
  • 1 small pinch of cumin seeds, crushed
  • 1 tbsp Dijon mustard
  • salt and freshly ground pepper
  • 4 whole grain hamburger buns.

Directions
  1. Preheat the barbecue to medium high.
  2. "Mix and scrunch all the ingredients together. Divide into 4, then gently mold and pack each burger into smallish slightly flattened balls."
  3. Brush grill grates clean, then brush lightly with oil. Place burgers on grill and cook rotating after 3 minutes, roughly 6 minutes per a side, until burgers are cooked through but still juicy. Toast hamburger buns placing cut side down on grill.
  4. Serve immediately with your favorite fixings!
