How to make it

  • Separate legs and thighs from the leg quarters and brown. Set aside.Place in the pressure cooker with 2 cups of the stock and cook at high pressure for 7 minutes.
  • Sweat the vegetables and add to the cooker with the remaining stock, rice and some salt and pepper.
  • Cook at high pressure for 10 minutes and then check. If the rice needs a little more time, give it another 2-3 minutes under pressure.

    Hi! This is a nice recipe! I'd like to ask you something since I'm new to pressure cooking. Does the dish come out soupy because there is so much chicken stock or does the rice absorb all of the liquid? Please let me know? I'd love to try your recipe. Thank you!

    Ah, another pressure cooker user! And I see someone started a group for it - I'd thought about one myself. I've got a couple of recipes for it posted - Granny's Beef Tips and Very East Sweet and Smoky BBQ Pork.
