Ingredients
  • Whole salmon, cleaned, head and tailed removed
  • Fresh sliced lemons to cover length of fish
  • Fresh lemon wedges for serving
  • Mayonnaise (not Miracle Whip -- too sweet)

Directions
  1. Preheat grill to medium-high.
  2. Slather the inside of the fish with mayonnaise and stuff with lemon slices and wrap in two layers of heavy aluminum foil.
  3. Grill for 20 to 30 minutes, depending on size of fish. (Fish is done when no longer opaque.) Do not overcook (although mayo will keep the fish from drying out).
  4. To serve, remove from tinfoil, lay fish open on a large platter and remove lemon slices. Garnish the platter with fresh lemon slices and allow guests to serve themselves.
