How to make it

  • Preheat grill to medium-high.
  • Slather the inside of the fish with mayonnaise and stuff with lemon slices and wrap in two layers of heavy aluminum foil.
  • Grill for 20 to 30 minutes, depending on size of fish. (Fish is done when no longer opaque.) Do not overcook (although mayo will keep the fish from drying out).
  • To serve, remove from tinfoil, lay fish open on a large platter and remove lemon slices. Garnish the platter with fresh lemon slices and allow guests to serve themselves.
