How to make it

  • Combine the dry ingredients in a bowl..
  • Make a well in center and add the yolks and sour cream and milk or buttermilk and mix and blend well.
  • Beat whites till soft peaks and stir into the batter.
  • Heat the pan over medium heat and add a bit of oil or butter to each hole ( or spray with cooking oil ) each time pan is filled.
  • Fill holes 2/3 to 3/4 full.
  • Cook a few minutes and carefully turn to cook other side.
  • This can be a bit tricky until one gets used to doing this.
  • Sometimes a knitting needle is used to lift and turn but I use rim of a spoon to do this.
  • If they come apart, they still will cook up nicely.
  • Cook golden brown.
  • Remove from pan and dust with powdered sugar if desired.
  • Serve with any other syrup or condiment one serves with pancakes.
  • About 7 balls per serving.
  • Serve if desired with assorted toppings or dust with powder sugar
