Chicken Reuben Sandwiches Recipe
Came up with this Idea because Family loves Reubens, wanted an alternative to the Corned Beef.

Ingredients
  • 4 SourDough ( sub sandwich type) Rolls
  • 4 Thin sliced, skinless, boneless Chicken Breasts
  • 2-3 C Sour Kraut ( adjust to Your liking)
  • Thousand Island dressing ( adjusted to personal taste)
  • Butter
  • Swiss Cheese

Directions
  1. Bake Chicken in Preheated 350 degree Oven. Cook 25-30 Minutes or done ( juices run clear)
  2. Remove Chicken Breasts, place some Sour Kraut and Swiss on top of each Chicken Breast.
  3. Return to Oven, Melt Cheese
  4. Butter and Toast/Broil Sour Dough
  5. 1-2 tbs. of Thousand Islad dressing on each slice of Sour Dough
  6. Add Chicken Breast with Cheese/kraut to Roll
  7. Serve
  8. * Could use an entire loaf of Crusty, toasted French Bread to make one Family size Sandwich.
  9. ** Could Grill Chicken Breast or Broil, instead of baking.

I have been looking for an alternative to corn beef for quite some time for when I wanted as Ruben . This is the answer, great post!
