This one is favorite of mine, and theres a few of those =) This was always a big hit love it even more now as an adult. Cuban delight!

Ingredients
  • 1 whole chicken (cut up)
  • 2 tbps. Ac'cent
  • 3 garlic cloves
  • 1/2 tsps. pepper
  • 1 lemon
  • 1 bay leaf
  • 1/3 cup olive oil
  • 1/2 cup dry wine
  • 1 large bell pepper
  • 2 cups of chicken broth
  • 1 large onion
  • 2 cups rice
  • 1 can tomato sauce
  • 1 small jar of pimientos
  • 1 can petit peas (baby)

Directions
  1. Baste the chicken with mashed garlic and lemon juice.
  2. Heat oil and brown the chicken, then add chopped onions and chopped bell pepper, tomato sauce, jar of pimientos with its liquid, liquid from peas, salt, pepper, accent, and the azafran, white wine, broth and water.
  3. Rinse the rice and let it sit in water while chicken is halfway cooked,
  4. then add the drained rice. Simmer until the rice is tender.
  5. Add the peas.
  6. Adorn with asparagus.
