How to make it

  • Make meatballs - combine everything and mix thoroughly
  • form meatballs - roll between palms
  • make 20-24 meatballs, set aside
  • combine chicken broth, onion, carrot, zucchini, tomatoes, cumin, oregano and cilantro in large pot
  • bring to boil, reduce heat, simmer 10 minutes
  • drop meatballs into soup (make sure soup is slightly boiling, the meatballs need to cook quickly)
  • return to simmer, cook another 10 minutes
  • season with salt and pepper to taste

    Very Good!...Made it using homemade chicken stock... I will surely make this again...Think I might add some black beans to the mix next time...What do you think?
