Albondigas Mexican meatball soup

- Meatballs: shopping list
- 1/2 lb ground beef shopping list
- 1/2 lb chorizo shopping list
- 1 egg, beaten shopping list
- 2 garlic cloves shopping list
- 1/2 cup cooked rice shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1 tsp cumin shopping list
- Soup: shopping list
- 6 cups chicken broth shopping list
- 1/2 cup diced onion shopping list
- 1 (16oz) can plain diced tomatoes shopping list
- 1/2 tsp cumin shopping list
- 1 tsp oregano shopping list
- 1 large zucchini, sliced shopping list
- 1 carrot, diced shopping list
- chopped cilantro - to taste shopping list
- salt and pepper shopping list
How to make it
- Make meatballs - combine everything and mix thoroughly
- form meatballs - roll between palms
- make 20-24 meatballs, set aside
- combine chicken broth, onion, carrot, zucchini, tomatoes, cumin, oregano and cilantro in large pot
- bring to boil, reduce heat, simmer 10 minutes
- drop meatballs into soup (make sure soup is slightly boiling, the meatballs need to cook quickly)
- return to simmer, cook another 10 minutes
- season with salt and pepper to taste
