Roasted Pear Champagne Vinaigrette Recipe
This deliciously flavorful dressing is both sweet and tangy. An outstanding complement to any salad, especially mixed greens or spinach. The recipe makes 2 pints, so you'll have plenty to keep or share.

Ingredients
  • 1/2 cup champagne vinegar
  • 1 cup Champagne
  • 1/2 ounce minced shallot
  • 1/2 ounce roasted garlic
  • 3 Tbsp honey
  • 1 tsp salt
  • 2 tsp freshly ground black pepper
  • 1 1/2 Tbsp chives
  • 2 cups canola oil
  • 1 Tbsp Dijon mustard
  • 2 roasted pears
  • 2 Tbsp butter
  • 1/2 tsp cinnamon

Directions
  1. Preheat oven to 400 degrees.
  2. Halve and core pears.
  3. Melt butter in baking dish.
  4. Add pears, sprinkle with cinnamon. Roast for 30 minutes.
  5. Remove from oven and allow to cool slightly.
  6. Combine all ingredients, except canola oil, in blender.
  7. Blend well making certain that pear is pureed.
  8. In a steady stream, slowly add canola oil.
  9. Continue to blend until dressing is well mixed. Best if allowed to chill for 30 minutes before serving, but can be used immediately.
