Roasted Pear Champagne Vinaigrette

- 1/2 cup champagne vinegar shopping list
- 1 cup champagne shopping list
- 1/2 ounce minced shallot shopping list
- 1/2 ounce roasted garlic shopping list
- 3 Tbsp honey shopping list
- 1 tsp salt shopping list
- 2 tsp freshly ground black pepper shopping list
- 1 1/2 Tbsp chives shopping list
- 2 cups canola oil shopping list
- 1 Tbsp Dijon mustard shopping list
- 2 roasted pears shopping list
- 2 Tbsp butter shopping list
- 1/2 tsp cinnamon shopping list
How to make it
- Preheat oven to 400 degrees.
- Halve and core pears.
- Melt butter in baking dish.
- Add pears, sprinkle with cinnamon. Roast for 30 minutes.
- Remove from oven and allow to cool slightly.
- Combine all ingredients, except canola oil, in blender.
- Blend well making certain that pear is pureed.
- In a steady stream, slowly add canola oil.
- Continue to blend until dressing is well mixed. Best if allowed to chill for 30 minutes before serving, but can be used immediately.
