Zucchini Boats Recipe
This is an easy side dish that is light and refreshing.

Ingredients
  • 2 zucchini
  • 2 plum tomato, diced
  • 2/3 cup shredded Mozzerella cheese
  • 1 1/2 tsp. minced fresh parsley
  • Dash each: salt, garlic powder, dried oregano, and pepper
  • 3 tsp. grated Parmesan cheese

Directions
  1. Cut zucchini in half lengthwise.
  2. Scoop out and discard pulp, leaving a 1/4 in. shell.
  3. Place zucchini in a saucepan and cover with water. Bring to a boil and cook for 4 minutes or until tender.
  4. Drain.
  5. In a small bowl, combine the tomato, Mozzerella cheese, parsley, salt, garlic powder, oregano, and pepper.
  6. Spoon into zucchini shells and sprinkle with Parmesan cheese.
  7. Place in an 8-in. square baking dish coated with nonstick cooking spray.
  8. Bake, uncovered, at 350 for 20 minutes.
