Zucchini Boats

- 2 zucchini shopping list
- 2 plum tomato, diced shopping list
- 2/3 cup shredded Mozzerella cheese shopping list
- 1 1/2 tsp. minced fresh parsley shopping list
- Dash each: salt, garlic powder, dried oregano, and pepper shopping list
- 3 tsp. grated parmesan cheese shopping list
How to make it
- Cut zucchini in half lengthwise.
- Scoop out and discard pulp, leaving a 1/4 in. shell.
- Place zucchini in a saucepan and cover with water. Bring to a boil and cook for 4 minutes or until tender.
- Drain.
- In a small bowl, combine the tomato, Mozzerella cheese, parsley, salt, garlic powder, oregano, and pepper.
- Spoon into zucchini shells and sprinkle with Parmesan cheese.
- Place in an 8-in. square baking dish coated with nonstick cooking spray.
- Bake, uncovered, at 350 for 20 minutes.
