This a wonderful dish which actually came from Giada De Laurentis. It is really a wonderful dish! I had to share this one with everyone. Very easy to put together. Even the kids ate it up!

Ingredients
  • 2 Tbls. Olive Oil
  • 1 small onion, grated
  • 1/4 cup fresh Italian Parsley leaves chopped
  • 1 large egg
  • 3 Tbls. ketchup
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup grated Romano cheese
  • 1/4 cup dried plain bread crumbs
  • 1 lb. Ground turkey
  • 2 Zucchini halved lengthwise
  • 1 Orange bell pepper, halved and seeded
  • 1 Red Bell Pepper, halved and seeded
  • 1 Yellow Bell Pepper, halved and seeded
  • 1 1/2 cups Marinara sauce

Directions
  1. Preheat the oven to 400 degrees
  2. Lightly drizzle the Olive oil in a 13x9 baking dish
  3. Wisk together the onion, parsley, egg, ketchup, garlic, salt, pepper, in a large bowl. Stir in the cheeze and bread crumbs.
  4. Mix in the turkey( best way is with your hands) it's basically like a meatloaf mix. Cover and refrigerate the turkey mix.
  5. Use a small melon baller or spoon to carefully scrape out seeds and inner flesh of the Zucchini leaving 1/8 inch. Be careful not to go thru the skin.
  6. Fill the Zucchini and Pepper halves with the mixture mounding slightly.
  7. Arrange the stuffed vegetables in the baking dish.
  8. Pour the Marinara sauce over the vegetables.
  9. Bake uncovered until the vegetables are tender and just begining to brown approx. 45 minutes
  10. Enjoy!
