Cajun Chicken And Sausage Gumbo Recipe

Ingredients
  • 1 roasted chicken, store bought, meat removed from bones - use carcass to make stock for something else
  • 10 cups chicken broth, store bought
  • 8 slices bacon, diced
  • 1 pound smoked sausage, sliced into half rounds 1/4" thick
  • 1 1/2 cups onion, chopped
  • 2 large green peppers, chopped
  • 3 stalks celery, diced
  • 5 cloves garlic, minced
  • 1 can diced tomatoes, 14.5 ounce can
  • 1 can tomato sauce, 15 ounce can
  • 10 ounces frozen corn
  • 20 ounces frozen okra
  • 1 teaspoon dried thyme
  • 1 tablespoon Hot Shot
  • Crazy Salt, to taste

Directions
  1. Cook bacon and sausage together in a large soup pot until bacon is crisp and sausage is browned. Remove meats and set aside.
  2. Add chopped onion, green pepper, celery, and garlic and cook until vegetables are tender. Stir OFTEN!
  3. Add chicken, bacon, sausage, broth, and all the rest of the ingredients. Bring to a boil, reduce heat, and simmer, uncovered, 1 1/2 hours.
  4. Serve in bowls, topped with a scoop of cooked rice - that's the traditional way. Without the rice is really good, too!

'Heart Home' New Orleans'....but....
be-that-as-it-may....YOU have THE REAL
recipe for Chicken-Sausage Gumbo..
Take it from me....!...one ingredient that I would
swap - out' is the regular tomatoes for one
can of 'Rotel tomatoes with peppers and onions'...
try this sometime...Anyway....great job...!

I USE THE CAJUN STYLE SMOKEY HOLLOW SAUSAGE IN MY GUMBO.. I ALSO USE ONE CAN OF ROTEL TOMATOES ALONG WITH THE REGULAR TOMATOES AND MORE ONIONS, REGULAR AND GREEN.. NICE POST..
