Cajun Chicken and Sausage Gumbo

- 1 roasted chicken, store bought, meat removed from bones - use carcass to make stock for something else shopping list
- 10 cups chicken broth, store bought shopping list
- 8 slices bacon, diced shopping list
- 1 pound smoked sausage, sliced into half rounds 1/4" thick shopping list
- 1 1/2 cups onion, chopped shopping list
- 2 large green peppers, chopped shopping list
- 3 stalks celery, diced shopping list
- 5 cloves garlic, minced shopping list
- 1 can diced tomatoes, 14.5 ounce can shopping list
- 1 can tomato sauce, 15 ounce can shopping list
- 10 ounces frozen corn shopping list
- 20 ounces frozen okra shopping list
- 1 teaspoon dried thyme shopping list
- 1 tablespoon Hot Shot shopping list
- Crazy salt, to taste shopping list
How to make it
- Cook bacon and sausage together in a large soup pot until bacon is crisp and sausage is browned. Remove meats and set aside.
- Add chopped onion, green pepper, celery, and garlic and cook until vegetables are tender. Stir OFTEN!
- Add chicken, bacon, sausage, broth, and all the rest of the ingredients. Bring to a boil, reduce heat, and simmer, uncovered, 1 1/2 hours.
- Serve in bowls, topped with a scoop of cooked rice - that's the traditional way. Without the rice is really good, too!
