My Meatloaf- Get Your Own Recipe

Ingredients
  • 1 lb extra lean ground beef (use local, organic, free range meat- it tastes better and is better for you!)
  • 1 lb extra lean ground pork (the meat should be pink- none of that white in there- that's the fat)
  • 1 lb ground turkey
  • 1/4 cup golden flax meal (not the dark stuff)
  • 1/4 cup milk or cream
  • 3 eggs, beaten
  • 3 palmfulls of dried onion flakes
  • 1 T garlic powder
  • 1 T oregano
  • 1 T thyme
  • 1/4 c ketchup (I use sugar free)
  • a good squirt of your favourite BBQ sauce
  • a good squirt of plain yellow mustard
  • a good pour of light soy sauce
  • lots and lots of fresh ground pepper
  • several grinds of coarse sea salt

Directions
  1. Pre-heat oven to 350F
  2. Mix all of the above until homogeneous. Some use their hands, I use a flat ended wooden spoon and some elbow grease.
  3. Place a cooling rack on top of a rimmed baking sheet. Spray with non stick spray.
  4. Form 2 football shaped meat masses and place side by side on rack. They'll be pretty soft, but will hold their shape. Cooking them on the rack allows any fat to drain off, and creates a nice crust.
  5. If desired, glaze in last ten minutes of cooking (I use ketchup/BBQ with cider vinegar & hot sauce)
  6. Bake for 90 mins or until internal temperature reaches 170F
  7. Let rest, tented for 10 minutes. Slice & serve. Wonderful hot or cold and great the next day.
  8. **Also try making mini-meatloaves in muffin tins!
