Alpine Potato Bake

- 2 pounds red potatoes scrubbed shopping list
- 1 cup chopped white onion shopping list
- 1/4 cup butter shopping list
- 2 tablespoons flour shopping list
- 1/4 teaspoon pepper shopping list
- 2 cups chicken broth shopping list
- 2 tablespoons spicy brown mustard shopping list
- 1 teaspoon prepared horseradish shopping list
- 1/4 cup fine dry bread crumbs shopping list
How to make it
- Butter an oblong baking dish.
- Cook potatoes in boiling salted water until tender then drain and allow to cool.
- Preheat oven to 375.
- In the same saucepan over medium heat sauté onion in butter for 10 minutes.
- Stir in flour and pepper then broth and bring to a boil and boil 1 minute stirring constantly.
- Remove from heat then whisk in mustard and horseradish.
- Slice potatoes 1/2" thick and layer in baking dish.
- Cover potatoes with sauce and sprinkle with breadcrumbs then bake 20 minutes.
