Alpine Potato Bake Recipe
This is an incredible potato dish, bursting with mustard and horseradish flavors. Goes great with everything. Enjoy

Ingredients
  • 2 pounds red potatoes scrubbed
  • 1 cup chopped white onion
  • 1/4 cup butter
  • 2 tablespoons flour
  • 1/4 teaspoon pepper
  • 2 cups chicken broth
  • 2 tablespoons spicy brown mustard
  • 1 teaspoon prepared horseradish
  • 1/4 cup fine dry bread crumbs

Directions
  1. Butter an oblong baking dish.
  2. Cook potatoes in boiling salted water until tender then drain and allow to cool.
  3. Preheat oven to 375.
  4. In the same saucepan over medium heat sauté onion in butter for 10 minutes.
  5. Stir in flour and pepper then broth and bring to a boil and boil 1 minute stirring constantly.
  6. Remove from heat then whisk in mustard and horseradish.
  7. Slice potatoes 1/2" thick and layer in baking dish.
  8. Cover potatoes with sauce and sprinkle with breadcrumbs then bake 20 minutes.
