Warm Creamy Potato Salad

- 6 red or gold or other waxy potatoes shopping list
- 1 small sweet onion minced shopping list
- 1/2 cup to 1 cup extra virgin olive oil or as needed shopping list
- salt and fresh grated black pepper shopping list
- Chopped parsley if desired shopping list
How to make it
- Made vegetarian for my relatives but a nice variation is adding some chopped cooked turkey bacon.
- Cook potatoes by favorite method.
- Peel when warm enough to handle.
- Slice or cube while warm.
- Stir in onion and parsley and add enough olive oil until salad is creamy and moist.
- Season liberally with salt and pepper.
- Garnish with a sprinkling of paprika or chopped tomatoes etc. if desired..
- Serve warm or at room temperature.
