How to make it

  • Made vegetarian for my relatives but a nice variation is adding some chopped cooked turkey bacon.
  • Cook potatoes by favorite method.
  • Peel when warm enough to handle.
  • Slice or cube while warm.
  • Stir in onion and parsley and add enough olive oil until salad is creamy and moist.
  • Season liberally with salt and pepper.
  • Garnish with a sprinkling of paprika or chopped tomatoes etc. if desired..
  • Serve warm or at room temperature.
