Ingredients
  • l lb farfalle, penne or tagliarini
  • 2 T unsalted butter
  • 1/2 small onion, finely chopped
  • 5 oz smoked salmon, coarsley chopped
  • 1 cup heavy cream
  • salt and freshly ground black pepper to taste

Directions
  1. Cook the pasta according to directions.
  2. In a heavy pan, melt the butter and saute the chopped onion until it is soft and transparent but has not changed color.
  3. Add half the chopped smoked salmon and the cream.
  4. Warm the mixture gently, blending thoroughly with a wooden spoon.
  5. When the pasta is cooked, drain well.
  6. Pour the pasta into a warm serving bowl.
  7. Add the cream and salmon sauce. Stir thoroughly and add a little freshly ground black pepper.
  8. Gently toss in the salmon strips, sprinkle on a pinch of parsley (optional) and serve at once. Easy on the salt, depending on the salmon.
